- Leftover roasted potatoes
- Homemade ranch dressing
- Spicy Dijon Mustard
- Parsley for garnish
Here’s what you do:
- Nuke the potatoes in the microwave (or—if you have time—or no microwave—or you want them to be crispy—you can pan fry them). In a small cup mix a glob of ranch dressing (a little if you’re on a diet, a lot if you’re not) with a dollop of spicy Dijon mustard (a little if you’re scared, a lot if you’re not).
- Garnish with a flourish of fresh or dried parsley leaves, crushed.
Tip: Make it decadent with crumbled bacon as a topping.
