Muffin Monday: Grandma's Honey

Do you have fond memories of cooking with your Grandmother? I know I do. When we were little, Aaron and I would stay over at her house sometimes and find excuses to bake stuff with her. I remember warm, gooey cookies and delicious chess cakes. This recipe from Taste of Home is for "Grandma's Honey Muffins". If nothing else, it brought back sweet, fragrant memories!


Yield: 12 muffins


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup 2% milk
  • 1/4 cup butter, melted
  • 1/4 cup honey

Directions

  • In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, combine the egg, milk, butter and honey. Stir into dry ingredients just until moistened.
  • Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 15-18 minutes or until a toothpick inserted near the center comes out clean. Remove from pan to a wire rack. Serve warm.
